Basil Lime Chicken

Ingredients:
  • 2 limes
  • 2 cloves of garlic, minced
  • 3 T Worcestershire Sauce
  • 3 T Dijon Mustard
  • 3 T Olive Oil
  • 3 T Soy Sauce
  • 3 scallions, chopped
  • Salt and Pepper
  • 3 lbs chicken breasts
Instructions:
  1. Zest and juice limes in a medium sized bowl.
  2. Add garlic, Worcestershire sauce, Dijon mustard, olive oil, soy sauce, scallions, salt and pepper.
  3. Cut chicken breasts into equal size cutlets and place in gallon sized bag.
  4. Pour marinade into bag and set aside for an hour.
  5. Fire grill and place cutlets on pre-heated grill, cooking for 7 minutes and then turning until chicken reads 170 degrees on a meat thermometer.
  6. Remove chicken and rest for five minutes. 
  7. Cut chicken into bite size pieces and drizzle second marinade over the top (see ingredients for second marinade below). 
Mix up and whisk second marinade ingredients:
  • 1/4 cup of extra virgin olive oil
  • 3 scallions, chopped
  • 1 lime, juiced and zested
  • 2 cloves of garlic, minced
  • 2 T basil, chopped

This was first made in April of 2013 by Erin and Jason for Jason's family, which everyone loved.
