This was first made in April of 2013 by Erin and Jason for Jason's family, which everyone loved.
Ingredients:
- 2 limes
- 2 cloves of garlic, minced
- 3 T Worcestershire Sauce
- 3 T Dijon Mustard
- 3 T Olive Oil
- 3 T Soy Sauce
- 3 scallions, chopped
- Salt and Pepper
- 3 lbs chicken breasts
- Zest and juice limes in a medium sized bowl.
- Add garlic, Worcestershire sauce, Dijon mustard, olive oil, soy sauce, scallions, salt and pepper.
- Cut chicken breasts into equal size cutlets and place in gallon sized bag.
- Pour marinade into bag and set aside for an hour.
- Fire grill and place cutlets on pre-heated grill, cooking for 7 minutes and then turning until chicken reads 170 degrees on a meat thermometer.
- Remove chicken and rest for five minutes.
- Cut chicken into bite size pieces and drizzle second marinade over the top (see ingredients for second marinade below).
- 1/4 cup of extra virgin olive oil
- 3 scallions, chopped
- 1 lime, juiced and zested
- 2 cloves of garlic, minced
- 2 T basil, chopped
