Family Beef Stew

Serves 5

Ingredients:

  • 1.5 lbs beef cubes
  • 1 lb baby carrots
  • 1 medium onion, chopped
  • Water (of varying measurements)
  • Gravy Master (of varying measurements)
  • Salt (of varying measurements)
  • Pepper (of varying measurements)
  • 6 medium potatoes (cut to bite size)
  • 3 heaping tablespoons of cornstarch mixed with 1/2 cup of cold water


Instructions:

  1. In a large pot, brown beef cubes.
  2. Once cubes are browned, add chopped onion and stir together with cubes.
  3. Add 8 cups of water, baby carrots, 2 tablespoons of Gravy Master, 1 teaspoon salt, and 1/4 teaspoon black pepper.
  4. Stir and let cook to a boil on high for 15 minutes.
  5. Turn down to medium heat, cover with screen or a lid with an open steam release.  Let cook for one hour (or until carrots are tender).
  6. Add another 8 cups of water, 1 tablespoon of Gravy Master, 1/2 teaspoon of salt, and pototoes.  
  7. Turn up to high heat and let cook until potatoes are softened.
  8. Pour in cornstarch mix, while stirring on high heat until thickened.



This recipe has been made in Erin's family for many years and has been a great favorite, especially in the fall and winter seasons.  Because Wendy did not leave behind a recipe for this, and thankfully for Michael who knows this recipe by heart, Michael helped Erin create this recipe.  It is suggested that personally baked bread or soda bread (as included in this blog) be used with this for dipping.
