My grandmother, Nancy; my mother, Wendy; and I have made this recipe several times, especially around Thanksgiving and everyone loves it!
Makes 1 9-inch pie.
Ingredients:
- 2 cups cooked or canned mashed pumpkin
- 1/2 cup firmly packed brown sugar
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1 teaspoon salt
- 1/4 teaspoon cloves
- 1/2 teaspoon cinnamon
- 3 eggs slightly beaten
- 2 cups milk
- 1 9-inch unbaked pie shell or make your own pie crust
Instructions:
- Preheat oven 450 degrees F.
- Combine pumpkin, sugar, and seasonings.
- Blend in eggs and milk and mix well.
- Pour into unbaked pie shell.
- Bake in oven at 450 degrees F for 10 minutes.
- Reduce temperature to 350 degrees F and continue baking 25 to 30 minutes or until knife inserted in center comes out clean.
- Let cool and serve with whipped cream if desired.
