Pumpkin Pie

As retrieved from Erin's grandmother, Nancy (I'm not sure of its original source).

Makes 1 9-inch pie.

Ingredients:

  • 2 cups cooked or canned mashed pumpkin
  • 1/2 cup firmly packed brown sugar
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1 teaspoon salt
  • 1/4 teaspoon cloves
  • 1/2 teaspoon cinnamon
  • 3 eggs slightly beaten
  • 2 cups milk
  • 1 9-inch unbaked pie shell or make your own pie crust


Instructions:

  1. Preheat oven 450 degrees F.
  2. Combine pumpkin, sugar, and seasonings.  
  3. Blend in eggs and milk and mix well.
  4. Pour into unbaked pie shell.
  5. Bake in oven at 450 degrees F for 10 minutes.
  6. Reduce temperature to 350 degrees F and continue baking 25 to 30 minutes or until knife inserted in center comes out clean.
  7. Let cool and serve with whipped cream if desired.


My grandmother, Nancy; my mother, Wendy; and I have made this recipe several times, especially around Thanksgiving and everyone loves it!
