Breakfast Burrito

Learned from Kathleen.

Ingredients:
  • Eggs
  • Whole wheat tortillas
  • Avocado
  • Pepperjack cheese
  • Hot sauce
Instructions:
  1. Scramble eggs.  
  2. Place tortillas with shredded cheese in oven at 350 for 1 minute.  
  3. Place avocado and eggs in tortillas, season with hot sauce to taste, wrap and cut.
First made by Kathleen, with minor assistance from David, for the 4 of us on our stay in an A-frame cabin during a climbing trip to Red River Gorge, KY after our engagement in May of 2011.
