Ingredients:
Ingredients:
- 1 package whole wheat tortillas
- 1 can of black beans
- 1 can of corn
- 1 can of pineapple (or 1 ripe mango or 1 ripe peach)
- 1 bunch of broccoli
- 1 red or orange or yellow pepper
- 1 bar of pepper jack cheese
- 1 ripened avocado
- 1 bottle of Cholula sauce
Instructions:
- Preheat oven to 450.
- Wash and cut broccoli and pepper into small pieces. Place in baking dish and toss with olive oil. Bake in oven for 15-20 minutes. Toss veggies once during baking.
- Drain pineapple (pour juice in glass and drink it!) or cut mango/peach.
- Drain and rinse black beans and corn. Sautee black beans and corn in frying pan with a tablespoon of olive oil. Sautee and toss for approximately 5 minutes or until hot. Turn off.
- Shred cheese.
- Cut avocado and mash in a bowl.
- Add veggies/fruit to bean/corn mixture and turn on heat and sautee and toss until everything is hot.
- While doing this, place tortillas, each with shredded cheese in the middle, on cookie sheet and place in the oven (that is turned off). Heat tortillas for 1 minute in turned off oven.
- Make burritos- place avocado and a scoop of bean/veggie/fruit mixture in tortillas, season with Cholula sauce to taste, wrap and cut.
