Fettucini Alredo with Asparagus

Learned from Dimitri, who got the recipe from the Internet.

Makes 2 servings.

Ingredients:
  • 1 lb asparagus
  • 3/4 lbs fettucini
  • 4 T butter, cut in pieces
  • 1 cup heavy cream
  • 1 pinch nutmeg
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup grated cheese

Instructions:
  1. Cut off ends of asparagus and cut into 1 inch pieces.
  2. Boil pasta and add asparagus at the end for 4 minutes.  Drain and set on individual plates/bowls.
  3. Use butter, cream, nutmeg, salt, pepper, and grated cheese, stirring in a pot over low flame until smooth.
  4. Add sauce to the top of pasta and asparagus.
Dimitri made this for the Zodda family when he had lost a bet to Jennifer on the 2013 Superbowl.  It was a huge hit and Jason and I definitely plan to make this often!
