Makes about 20 chicken pieces.
Ingredients:
- 5 lbs "thin sliced" chicken cutlets
- 1 1/2 cups of olive oil
- 2 tsp. Kosher salt
- 3/4 tsp. black pepper
- 3/4 tsp. rosemary leaves
- 3/4 tsp. basil leaves
- 3/4 tsp. parsley flakes
- 5 T Parmesan cheese
- 4 large cloves of fresh garlic- finely chopped
- Bag of fresh small spinach leaves
- 2-3 cups of bread crumbs
- 2 lbs Mozzarella cheese- cut into very thin long strips
- 1 brush
- Toothpicks
- 2 cookie sheets with olive oil
Instructions:
- Place the olive oil, salt, pepper, rosemary, basil, parsley, garlic, & Parmesan cheese into a bowl. Chop some of the spinach leaves and add to this mixture. Mix well and place on the side.
- Cut each chicken in half. Place on a dish and move to the side.
- Place thin long strips of Mozzerella cheese on a dish and place to the side.
- Place bread crumbs into a bowl.
- Take one chicken cutlet at a time and do the following:
- Brush the olive oil mixture on both sides of chicken cutlet.
- Add to this, almost as if you are making a sandwich, 2 slices of Mozzarella cheese and spinach leaves.
- Drizzle some more olive oil mixture on top, then roll the cutlet very tightly and place two toothpicks to hold close.
- Roll rolled up cutlet into bread crumbs and place on cookie sheet.
- Repeat for all remaining chicken cutlets.
- Bake at 350 for 30 to 45 minutes.
First made by Jennifer and Alana for the family. Jason then made it for Erin at Erin's Miami apartment in spring of 2012 after she arrived home from a day at internship. Erin & Jason have made this for friends and Erin's family and it's a big hit.
