Carrot Cake

Ingredients:

  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. allspice
  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1/2 cup chopped nuts (optional)
  • 1 cup grated carrots
  • 1 1/2 cups sugar
  • 1 cup oil
  • 3 eggs
  • 2 1/2 tablespoons hot water


Instructions:
  1. Grease and flour pan(s) of your choice.
  2. Preheat oven 350 degrees.
  3. Mix together dry ingredients in a small bowl: flour, baking powder, baking soda, salt, allspice, nutmeg, cinnamon, and chopped nuts (optional).
  4. Grate carrots and pack tightly into 1 cup (set aside).
  5. In a large mixing bowl, mix together sugar and oil.  Add 3 egg yolks (set aside egg whites) and hot water to mixture.  Then add grated carrots.
  6. Gradually add dry ingredients to mixture and mix well.
  7. With a mixer, beat egg whites until stiff.  Gently fold egg whites into batter with a spatula.
  8. Pour into desired pan(s).
  9. Bake for 1 hour on middle rack.


Wendy had this recipe for many years and made this on multiple occasions.  She made it once for Jason after finding out that his favorite cake was carrot cake.  Erin made this for Jason on his 30th birthday and it was a big hit.  It is recommended that you make cream cheese icing with this cake (also included in this blog).
