Makes about 25 very large crepes.

Alana made this several times on different occasions for her family and/or guests. It was loved by all and this will continue to be made by us for our future family.
Makes about 25 very large crepes.
Ingredients for crepes:
- 3 cups of water
- 3 cups of flour, sifted
- 12 eggs
- Some salt
- Prosciutto fat for rub
Instructions for crepes (can be done a day before):
- Mix all ingredients together.
- Let this mixture stand for approximately 45 minutes.
- After 45 minutes, rub Prosciutto in crepe pan and pour one crepe at a time.
- Transfer onto wax paper and cool.
Ingredients for manicotti filling:
- 3 lb container of ricotta cheese
- 3/4 of a 5 lb bag of mozzarella cheese
- Handfuls of Parmesan cheese
- Parsley
- 3 eggs
Instructions for manicotti filling:
- Preheat oven to 350 / sauce botto of pan/dish.
- Mix all ingredients together and fill crepes.
- Arrange crepes and bake about 15 to 20 minutes.
