Alana's Exclusive Manicotti Pasta Recipe

As learned from Alana's cookbook binder.
Makes about 25 very large crepes.

Ingredients for crepes:
  • 3 cups of water
  • 3 cups of flour, sifted
  • 12 eggs
  • Some salt
  • Prosciutto fat for rub

Instructions for crepes (can be done a day before):
  1. Mix all ingredients together.
  2. Let this mixture stand for approximately 45 minutes.
  3. After 45 minutes, rub Prosciutto in crepe pan and pour one crepe at a time.
  4. Transfer onto wax paper and cool. 


Ingredients for manicotti filling:
  • 3 lb container of ricotta cheese
  • 3/4 of a 5 lb bag of mozzarella cheese
  • Handfuls of Parmesan cheese
  • Parsley
  • 3 eggs

Instructions for manicotti filling:
  1. Preheat oven to 350 / sauce botto of pan/dish.  
  2. Mix all ingredients together and fill crepes.
  3. Arrange crepes and bake about 15 to 20 minutes.


Alana made this several times on different occasions for her family and/or guests.  It was loved by all and this will continue to be made by us for our future family.
