Oatmeal Raisin Cookies

Makes 36 cookies.

Ingredients:

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 cup dark brown sugar, firmly packed
  • 2 large eggs
  • 2 teaspoons vanilla
  • 3 cups oats (not instant)
  • 1 1/2 cup raisins


Instructions:
  1. Mix together dry ingredients: flour, baking soda, baking powder, and kosher salt.  Set aside.
  2. Cream wet ingredients: butter, sugar, dark brown sugar, eggs, and vanilla.  Add to the dry ingredients.
  3. Then stir in oats and raisins.


Made this at Noah's request.  Because it was such a big hit, it was made again for Michael, Frank, and Jason.  For a healthier subsitute, refer to the non-fat oatmeal cookies (as can be found on this blog).
